Homemade Granola

I like to keep snacks around the house that are not packaged but are easy for the kids to enjoy during our school day or after dinner when they go back to the kitchen like hobbits on their 16th meal. My kids devour this granola and I don't get frustrated that they are eating junk. If you have very hungry people living in your home double the recipe.

Maple Almond Granola

Preheat oven to 300 degrees and spray a cookie sheet with olive oil spray

In a bowl mix together:

2 and 1/2 cups gluten free old-fashioned rolled oats ( I like Bob's Red Mill)

1 cup slivered almonds (and any other nut you like)

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

In a separate bowl mix:

1/2 cup Maple syrup (I like dark from Trader Joes)

1/4 cup coconut oil- melted

1/4 teaspoon almond extract

3/4 Tablespoon vanilla extract ( you can adjust this how you like)

Pour the wet ingredients over the dry and mix very well.

Spread on the cookie sheet and bake for 40 minutes EXACTLY!

NOTE: Gently stir every 15 minutes and take out right at 40 minutes.

We eat this over greek yogurt, with grass milk and sometimes by the spoonful because I have teenagers!

This makes a wonderful Christmas gift as well in a pretty jar!
