Easy Spinach Frittata



I am obsessed with eggs! So obsessed that we have had chickens twice and I can't wait to do it again. Lulu, Pip, Scraps & Dixie gifted me with the most beautiful eggs, now I get them from a dear friend who happily feeds my obsession.

I make Quiches and Frittata's often to keep in the refrigerator for easy breakfast and protein filled snacks for my always hungry teenagers. This is a favorite!




Preheat the oven to 400 degrees.

Melt 3 Tablespoons butter in the bottom of a pie dish.


Slice 1/2 an onion and saute on low heat with some coconut oil for 10 minutes.

Add 2 cups of chopped fresh spinach to the onions for 3-4 minutes stirring often so not to burn. Remove from the heat.


In a large bowl mix together:

7 large eggs (preferably organic)

1/2 pint cottage cheese

1/3 cup gluten free flour ( I like Trader Joes)

3/4 teaspoon baking powder

1/4 teaspoon salt

2 cups of shredded cheese (I like Jack but Pepper Jack is good as well as others)


Add the spinach and onions to the mixture and pour into prepared pie dish.

Bake at 400 degrees for 15 minutes and then turn the temperature to 350 degrees for 25 minutes.
