The Best Beef Taco

My slow cooker is one of my best friends! There are many appliances I could live without but my slow cooker is not one of them! This is a weekday go to at my house.

What you need:

1 large Flank Steak ( I prefer grass-fed if you can find it)

2 cloves of garlic (or more) - I sometimes use crushed garlic

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon onion powder

1/4 teaspoon cayenne pepper

Corn tortillas

Pico de gallo

Avocado slices

Jalapeno slices

These tacos are so easy to make and the house smells great. I use this recipe when I need to work or I know I will be home a little later and we will all be hungry.

In the morning mix all of the spices together very well. Put a small amount of olive oil in the bottom of the slow cooker (because it's good for you). Use a fork and poke lots of holes in the flank steak on both sides. Rub the steak all over with spice mix and then sprinkle the garlic on top. (You could add sliced onion at this point if you want a little more flavor).

Put the steak in the slow cooker with the lid on and cook on low for 8-10 hours. I usually choose 10 because it gives me more flexibility. When we wan to eat dinner I take it out of the slow cooker, shred it with two forks

Warm up the tortillas, serve with your favorite toppings and enjoy with chips and salsa and a Caesar salad! Enjoy
