Annie's Fish Tacos

Every now and then I need a little break from making dinner so that I can relax or focus on other things. When this happens I usually request one of two meals from my daughter and my husband who team up for the task. Fish tacos or homemade pizza! Fish is not cheap so when we have stocked the freezer from Trader Joe's in Boise, they pull out the halibut or cod and make the BEST fish tacos!

First cube the halibut and set aside.

Mix together:

1 & 1/2 teaspoons ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon thyme

1 Tablespoon smoked paprika

1/4 teaspoon cayenne pepper

Salt and pepper (just a pinch)

Mix the seasoning with the fish until all is coated well.

Heat about 3 Tablespoons of Avocado Oil in a large skillet over medium-high heat. (Avocado oil is the best for high heat, health, and flavor)

Add the fish and saute well, turning over to make sure they are evenly cooked, about 5-6 minutes.

We assemble the tacos on warmed corn tortillas and top with shredded cabbage and chunky salsa or Pico de Gallo, and maybe some fresh guacamole. These tacos are so flavorful from the spices and the avocado oil that they don't need much on top. I serve with beans and a small salad!
